Since Memorial Day weekend is coming up I knew that I needed to smoke something and I have decided to smoke a brisket!
I found a local butcher and his prices are reasonable for a brisket. I have spent the evening searching for marinades. I can't decide if I am going to marinade it or rub some seasoning on it. Or maybe I could do both! All I know is that it will be a 12 to 14 hour job. But from what I remember the taste is phenomenal.
I am not sure how big a brisket I will smoke. One that can be eaten for at least a week for sure. I figure I spend Saturday smoking. Get up before dawn to get the ball rolling. Maybe for dinner I could be finished but from what I am reading the finished product should sit for around four hours to make the fat melt into the meat. I want to smoke it long enough to pull it. That reminds me that I need to buy some more barbque sauce.
I will buy the brisket Wednesday. I have read that if I marinate it I should do it for 24 hours. So I might start it Thursday night since I will start my smoking early, early Saturday morning providing the weather is coopertative.
I am so looking forward to Memorial Day weekend!
