Since I did not have much time today and its supposed to rain all day tomorrow I thought I would sneak a quick smoke in.

I went to the local butcher and found some really great meats.  He is a bit more than the grocery store but from what he was telling me everything he has is fresh.  No hormones or preservatives in his meat.  I saw some really good looking scallops that I want to buy the next time I am in.

For todays smoke I have some cajun sausage which is on the left, some hot dogs for Mattie and some sweet Italian sausage on the right.  The butcher said they were made with fresh pork so lets see how they taste!

Is it oatmeal, butter and honey or oatmeal, butter and brown sugar?

I cannot decide.
